This is my favorite breakfast! I LOVE it with our fresh over-easy duck eggs served on top!
Sweet Potato Brussels Sprout Hash with Farm Fresh Eggs
1-2 sweet potatoes, chopped or grated
1/2 pound Brussels sprouts, chopped
Rock Field Farm beef breakfast sausage, cooked and crumbled
2-3 eggs per person
mushrooms, kale, zucchini etc. optional
Cook bacon in frying pan until crisp. Remove and crumble, set aside. Add sweet potatoes to pan and cook, turning occasionally, until almost soft. Add onion and Brussels sprouts, turning and cooking until vegetables are done. Add bacon back in, season with Montreal Steak Seasoning (or your choice of seasonings), then serve with freshly cooked chicken or duck eggs! We prefer our eggs over easy (you definitely want the yolk runny!) and served on top of the warm hash.
This recipe is super easy but does take a bit of time to cook. However, the veggies can be prepped in advance, and the hash also reheats and/or freezes beautifully. It is a family favorite, and we often eat it for dinner too!
